Kaslo Sourdough is a second-generation family business in the West Kootenays of British Columbia. Gabriele and Silvio Lettrari came to Canada from Germany and spent more than twenty years running the Kaslo Sourdough Bakery, working through flours and seed blends and never quite leaving a recipe alone — and that same patience is what went into the pasta. Their daughter Heidi manages the business today, and their son Stefan, who apprenticed at a bakery in Germany's Erzgebirge before coming home, runs pasta production. Around them is a crew of Kaslonians who care about the food as much as the family does. Every batch is fermented with a live sourdough culture and slow-dried rather than rushed, which is where the firm bite comes from, and they work in as many Canadian ingredients as they can get.
